Minty chocolate crackle slice
Intro
I love chocolate crackles but they pose a few problems. There are never enough of them in a batch (they are consumed before I can blink!), the kids all go crazy (too much sugar) and at $0.08c each I hate paying for cup cake papers!
My recipe solves all these problems. It is really minty so it’s too strong to eat too fast, there are 50 per cent more bubbles (stretch out that recipe!) and it’s a slice so no fiddly cup cake papers required.

Ingredients
1 block Copha (250g)
1 cup icing sugar
½ cup (or around 4 tablespoons) cocoa
6 cups Rice Bubbles
3 drops peppermint oil
Equipment
Greaseproof paper, baking tray, bowl or saucepan to melt the Copha in and a big mixing bowl.
Method
Start by melting the Copha. You can do this by putting it in a bowl in the microwave, or in a saucepan over a low heat on the stove. When it’s melted stir in the cocoa and icing sugar. It will be a little lumpy but it doesn’t matter. Let the mixture sit to cool. In the meantime, put 6 cups of Rice Bubbles in your big mixing bowl, get out your baking tray and line it with 1 sheet of greaseproof paper. Tear off another piece the same size and put it aside for later.
When the Copha mixture has cooled and thickened slightly, stir in the peppermint oil then stir the mixture into the Rice Bubbles. Scoop the mixture into your lined baking tray and spread it with a spoon until even. Place the second sheet of baking paper on top and smooth out once more with your hand. Put the slice into your fridge or freezer to set. To serve, cut it into pieces roughly 1 inch square.
Notes
To make the slice last cut it into three even pieces the moment it is ready and put two thirds in two separate containers somewhere in the depths of your fridge. Serve the remaining third. With any luck your family won’t find the hidden goodies and next time you have visitors you will have something ready-made.
